She is known for her own fitness accomplishment in losing over 200 pounds through hard work and consistency and she continues to strive toward healthier living while helping to educate other women to improve their lifestyle as well. Goals for the upcoming month: Lorena’s personal goal this month is to lose 8-10 pounds while working to help her current clients meet their fitness goals through a variety of workouts and nutrition guidance. She is also looking into a business plan to open up her own gym.

STRAWBERRIES AND CREAM OVERNIGHT OATS

SERVES:

1. Place 1⁄2 cup strawberries, yogurt, coconut milk, maple syrup, and jam in blender; cover and blend until smooth.
2. Place remaining 1⁄2 cup strawberries, oats, and chia seeds in a medium bowl. Top with yogurt mixture; stir to combine. Cover tightly; refrigerate four hours, or overnight.
